Fast Chicken Alfredo! Kid Approved!

My kids love pasta with Alfredo sauce and I love how quick and easy it is to make! It’s so simple that I prefer it over the jar sauce, and the taste doesn’t even come close. Heavy cream and Parmesan cheese have a pretty long fridge life (about a month) so it makes it convenient to have the ingredients on hand! Pair it with some asparagus and you have a gourmet dinner.

Ingredients:

  • 2 chicken breast, cut in half for frying
  • 8 oz your favorite pasta (I used thin spaghetti)
  • 4 TBSP butter
  • 2 TBSP cream cheese
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 tspn fresh minced garlic
  • Salt and pepper to taste

Directions:

  1. Pat the chicken dry (if it’s wet it won’t fry well, it will look like boiled chicken) Season the chicken with salt and pepper.
  2. Set a pot of water to boil.
  3. Melt the butter in a deep frying pan, (deep because you will be making the sauce in the same pan!) and fry the chicken 3-4 minutes on each side depending how thick it is.
  4. Set the chicken aside.
  5. Add the pasta to the boiling water and cook according to the instructions on the box.
  6. Simmer the heavy cream in the same sauce pan. DO NOT wipe off or spill out all the FLAVOR in the pan! (Secret to the amazing sauce flavor!)
  7. While the sauce is simmering, add the cream cheese and garlic, whisk the two together. Season with a dash of salt and pepper.
  8. After about 4 minutes turn the heat to medium low and add the Parmesan cheese. Stir it until it’s melted and make sure it doesn’t come to a simmer, the texture of the sauce will be off!
  9. Cut the chicken into strips and toss it in the pan along with the cooked pasta! If the pan isn’t big enough place the pasta in a serving dish, place the chicken on top and pour the sauce over!
